Hors D'Oeuvre

Our Hors d’Oeuvre Menu offers hot and cold delectables for any occasion. Most parties should consider 8 to 12 pieces per person, depending on the time of day and type of event. This can be a combination of savory and/or sweet items.

For full service catering, all of our hot or warm Hors d’Oeuvres are cooked on location to ensure freshness and many venues do not have the necessary equipment. We can bring portable ovens, fryers and griddles to the site and in some cases, we may need permission from your venue for this equipment.

The menu below is priced per dozen with a minimum order of 2 dozen per item.

Wrap Options - $20/dozen

Jalapeño Chicken Wraps

Roasted shredded chicken, pickled jalapeño, avocado, cilantro lime sauce and spring mix wrapped in a flour tortilla.

 

Southwest Chicken Chipotle Wraps

Combination of chicken seasoned with chipotle peppers, black beans, roasted corn, cilantro, spring mix, tomatoes, cheddar, and black olives topped with our own jalapeño ranch wrapped in a southwest flour tortilla.

 

BLT Wraps

Crispy bacon, our house made roasted veggie spread, avocado, tomato, spring mix, and our famous goat cheese Ranch wrapped in a southwest flour tortilla.

 

Asian Salad Wraps

Roasted shredded chicken, Asian slaw, peanut Thai vinaigrette and sweet caramelized sliced almonds all wrapped in a flour tortilla.

 

Greek Chicken Salad Wraps

Roasted shredded chicken, black olives, feta, cucumbers, tomatoes, pickled red onion and our Greek vinaigrette wrapped in a flour tortilla. These can be made vegetarian.

Skewer Options

Seasonal Fruit Skewers - $20/dozen

We use whatever fruit is in season and tastes great! Everyone loves fresh fruit. These are also great for your breakfast, lunch, or brunch events! GF/Vegetarian

 

Caprese Skewers - $24/dozen

Cherry tomatoes, marinated mozzarella balls and fresh basil. Made with tasty red and yellow cherry tomatoes. Vegetarian

 

Prosciutto & Melon Skewers - $24/dozen

Prosciutto folded between two balls of cantaloupe then skewered. A classic combination. GF

 

Watermelon Bites - $28/dozen

Watermelon, goat cheese, bacon, and basil in a balsamic glaze. Wonderfully fresh bites of watermelon skewered for easy handling and served on a teardrop spoon.

 

Havarti ~ Mint ~ Blackberry Skewers - $18/dozen

Pesto Tortellini Skewers - $28/dozen

Mozzarella ~ cheese tortellini ~ grape tomato ~ feta stuffed olive ~ basil ~ pepperoni skewered, drizzled with balsamic & fresh grated parmesan.

Bruschetta Options

 

Gorgonzola Honey-Walnut Crostini - $20/dozen

Rich Gorgonzola cheese on a toasted baguette topped with toasted walnuts & a drizzled of honey. Warmed on site for best presentation. Vegetarian

 

Prosciutto Arugula & Truffle Bruschetta - $28/dozen

Inspired by NYC Chelsea Restaraunt and recreated by Chef Doug Lawyer - my little brother.  This crispy baguette is spread with Truffle Cream Cheese, Proscuitto and topped with fresh Arugula tossed in Truffle Oil.  These are an amazing new addtion to our menu.

 

Avocado Chimichurri Bruschetta - $24/dozen

Cubes of avocado folded into a Chimichurri Sauce, an Argentinean sauce of parsley, cilantro and garlic. Vegetarian

 

Sweet Peppers & Creamy Gorgonzola Bruschetta - $24/dozen

Sautéed red and yellow peppers, basil and capers with creamy warm Gorgonzola on a toasted baguette. Vegetarian

 

Mushroom & Gruyere Bruschetta - $28/dozen

Blend of cremini and button mushrooms, with shallots & Gruyere on a toasted baguette. Rave reviews. Best cooked on site. Vegetarian

 

Smoked Salmon & Caper Bruschetta - $28/dozen

Cream cheese with a hint of lemon topped with a slice of smoked salmon, capers and fresh dill. Smoked salmon lovers say these are the best!

 

Crispy Eggplant Capresse Crostini - $32/dozen

Anyone who says no to eggplant has not tried this hors d’oeuvre. We sushi fry the eggplant which makes for such a crispy base. Then we add roasted tomatoes, fresh mozzarella, topped with fresh basil. Vegetarian

 

Creamy Goat Cheese Bruschetta topped with Caramelized Onions - $28/dozen

These get some of our best reviews. The Bruschetta is layered with flavor. First layer is a compound butter of garlic and parsley, then creamy goat cheese, and topped with slow cooked caramelized onions and sun dried tomatoes. Vegetarian

 

Antipasto Bruschetta - $28/dozen

These wonderful delights come from Jerry's 80th birthday celebration. Jerry loves olives and they are highlighted here in our newest Bruschetta. Genoa Salami, roasted red peppers, black & green olives, marinated mushrooms, fresh mozzarella, drizzled with olive oil and topped with fresh basil. This is beautifully presented on our wooden Tuscan tray with a marble board with an olive medley.

 

Crisp Parmesan Crackers - $28/dozen

Housemade parmesan crackers piped with our roasted garlic and herb cream cheese then topped with flash fried crisp leeks. Another favorite and vegetarian delight. 4 dozen minimum order. Vegetarian

 

Chicken Options

Bacon Wrapped Chicken Pablano - $28/dozen

Seasoned chicken tender, shallot cream cheese and pablano wrapped in bacon. Served with jalapeño cilantro sauce. GF

 

Buffalo Chicken Balls - $28/dozen

These are crispy crunchy balls of spicy buffalo sauced chicken and cheddar cheese. Served with your choice of housemade blue cheese or jalapeño ranch dip and celery sticks. Cooked on site.

 

Buffalo Chicken Cups - $28/dozen

Who doesn’t just love buffalo chicken wings? These taste the same, but without the mess. Crisp flour tortilla cups filled with buffalo sauced roasted chicken, topped with blue cheese and green onions.

 

Southwest Chicken Eggroll with Cilantro Sauce - $28/dozen

Shredded chicken, fresh pico de gallo, cheddar cheese inside a fried flour tortilla. Served with a spicy cilantro sauce. These must be cooked on site.

 

Pork & Bacon Options

 

Potstickers with Asian Dipping Sauce - $28/dozen

Pork and veggie Chinese dumplings with a traditional soy dipping sauce.  We steam cook these on site and serve them on a sliver leaf with red chop sticks.  Fun new appetizer by Brooke. Can be made vegetarian.

 

Pulled Pork Eggrolls with BBQ sauce - $28/dozen

House smoked pulled pork and cole slaw wrapped in an eggroll wrapper. Served with our housemade BBQ sauce.  Cooked on site.

 

Bacon Wrapped Cheese Stuffed Jalepeños - $28/dozen

Someone say Poppers? These are the best made with fresh jalapeños stuffed with roasted red pepper and garlic cream cheese, cheddar cheese, then bacon wrapped and baked to perfection. Cooked on site.

 

Devils on Horseback - $28/dozen

Creamy blue cheese stuffed dates, wrapped in prosciutto, then baked. Cooked on site.

Beef Options

 

Fried Brisket Balls - $28/dozen

Sous Chef Brooke's latest creation. First response on this offering is Fried Brisket? Second response is OMG!!! Panko fried brisket balls served with our housemade BBQ sauce.

 

Petite Beef Wellington - $36/dozen

Filet mignon topped with Duxelles wrapped in puff pastry and baked until golden brown. Cooked on site (minimum order 6 dozen).

 

Beef Carpaccio - $36/dozen

Rolled Rare Beef Tenderloin filled with pickled red onion & arugula vinaigrette, topped with capers, a shave of fresh Parmesan and flaked salt.

Seafood Options

 

Cayenne Candied Bacon Wrapped Shrimp - $36/dozen 

Large White Tiger Shrimp wrapped with sweet and spicy bacon, then baked. Everyone wants at least two of these wonderful delights. Baked on site.

 

Scallops with Jezebel Sauce - $36/dozen 

Seared Scallops topped with a piece of crispy bacon and drizzled with Jezebel Sauce served in a spoon. Jezebel Sauce, a classic Southern sauce, gets its sweetness from apple jelly and pineapple preserves and a spicy kick from mustard and horseradish.

Classic Crab Cakes with Remoulade Sauce - $36/dozen

Bite-sized “Maryland Style” lump crab cakes with a lemon-mustard-herb remoulade sauce. These are a must for your party! “What makes the difference in our crab cakes…they are mostly crab!!” Cooked on site.

 

“Bloody Mary” Shrimp Shots - $36/dozen

Shot glass filled with “Bloody Mary” cocktail sauce (...yes there is Vodka!) with a Jumbo Shrimp and mini stalk of celery. This was inspired by a client and perfected by our chef.

 

Shrimp Ceviche Cocktail with Crispy Tortilla Strips - $36/dozen

Fresh ingredients of cucumber, avocado, tomato, cilantro and shrimp. This makes for a fun and yummy appetizer. Made in “shot glasses” with thin strips of tortilla on top, served with a shrimp fork.

 

Slipper Lobster wrapped in Bacon - $36/dozen

These delicate Lobsters are wrapped in bacon, baked on site and dipped in warm drawn butter.  Great new BT2BJ hors d'Oeuvre.

 

Smoked Salmon & Caper Bruschetta - $28/dozen

Cream cheese with a hint of lemon topped with a slice of smoked salmon, capers and fresh dill. Smoked salmon lovers say these are the best!

Lamb Pops with Mint-Almond Relish - $36/dozen

Roasted Rack of Lamb cooked to medium and served with our Mint-Almond Relish or Chimichurri Sauce.

Fried Green Tomatoes BLT - $28/dozen

Sliced then Panko fried green tomatoes, topped with housemade mayo, micro greens and a piece of crispy bacon. This year round appetizer is crisp and refreshingly tasty!

 

Saffron Suppli with Marinara - $28/dozen

Saffron risotto balls, stuffed with fresh mozzarella, Panko-breaded and then fried. Served with our warm housemade Marinara sauce. This was probably our very first hors d’ouevre and still one of the most beloved by guests. Cooked on site.

 

Fried Mac 'n Cheese Balls - $24/dozen

That's right! We bread our mac 'n cheese in Panko and fry them on site. Rave reviews and vegetarian, too.

 

Mozzarella Sticks - $24/dozen

Panko breaded Mozzarella sticks fried on site and served with our tasty housemade Marinara Sauce. Vegetarian

 

Bite Sized Leek and Red Pepper Quiche - $24/dozen

Mini bite-sized quiche of sautéed leeks, red bell pepper and shallots in a white cheddar crust. We have served these for years at both cocktail parties and breakfast events. Small bites of goodness. Served at room temperature. Other available flavor combinations: Spinach and Mushroom, Bacon and Cheddar. Vegetarian options.

 

Lamb Pita with Tzatziki Sauce - $28/dozen

Marinated and Sautéed Lamb, pickled red onion served on Pita triangle, topped with Tzatziki Sauce.

 

Loaded Tater Tots with Jalapeño Ranch Dipping Sauce - $28/dozen

Made with grated baked potatoes and stuffed with roasted garlic and pepper cream cheese, cheddar cheese & bacon. We serve this with our housemade jalapeño ranch dipping sauce. Cooked on site. Can be made Vegetarian.

 

Toasted Ravioli with Arrabbiata Sauce - $24/dozen

Fresh pasta ravioli, filled with Italian cheeses, rolled in herb bread crumbs, then fried. Served with our spicy Arrabbiata sauce. Cooked on site. Vegetarian

 

Crispy Parmesan Basket of Herbed Goat Cheese - $34/dozen

Looking for something delicious and different? Creamy cilantro and chive goat cheese piped into crisp baskets made of fresh parmesan, topped with chopped Kalamata olives and toasted walnuts. We make the parmesan crisps the day of the party and pipe them on site to preserve this delicate delight. Vegetarian option…but everyone will want one, for sure!
